Ingredients

  • 80 g vegan butter, room temperature , 75-80% fat
  • 60 g natural smooth peanut butter, or any nut butter
  • 70 g brown sugar
  • 60 g granulated sugar
  • 60 g unsweetened applesauce
  • 130 g all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp organic vanilla powder, or 1 tsp vanilla extract
  • pinch sea salt
  • ½ cup (53g) rolled oats
  • 100 g dark chocolate chips or chunks , + extra on top

Instructions

  • Preheat the oven to 355°F (180°C). Lightly grease a 9”x9” (23x23cm) baking pan with vegan butter (or oil). Then line the pan with a strip of parchment paper. Set aside
  • In a large bowl using a hand mixer or a stand mixer, beat together vegan butter, peanut butter, brown sugar, and granulated sugar for about 1 minute until creamy. Add in applesauce and mix to combine. Scrape down the sides and mix again as needed to combine.
  • To the wet mixture, add all-purpose flour, baking powder, vanilla powder, and a pinch of sea salt and mix to combine. Fold in rolled oats and chocolate chips.
  • Transfer the dough into the prepared pan and spread it evenly. Top with extra chocolate chips, if desired.
  • Bake in preheated oven for 18-20 minutes, or until golden brown on top.
  • Remove from oven and allow to cool completely before using the parchment paper to lift out of the pan. Cut into 9 bars.
  • Enjoy!
