Preheat the oven to 355°F (180°C). Lightly grease a 9”x9” (23x23cm) baking pan with vegan butter (or oil). Then line the pan with a strip of parchment paper. Set aside
In a large bowl using a hand mixer or a stand mixer, beat together vegan butter, peanut butter, brown sugar, and granulated sugar for about 1 minute until creamy. Add in applesauce and mix to combine. Scrape down the sides and mix again as needed to combine.
To the wet mixture, add all-purpose flour, baking powder, vanilla powder, and a pinch of sea salt and mix to combine. Fold in rolled oats and chocolate chips.
Transfer the dough into the prepared pan and spread it evenly. Top with extra chocolate chips, if desired.
Bake in preheated oven for 18-20 minutes, or until golden brown on top.
Remove from oven and allow to cool completely before using the parchment paper to lift out of the pan. Cut into 9 bars.
